Adapted from our Open Kitchen Trade Secrets series, Chef Eli will guide you through some of the fundamental techniques of professional cookery. A lot of time and work goes into the bold flavours found in Mediterranean cuisine; yet the process is surprisingly straightforward. You’ll learn traditional techniques – like fermentation of pickles – along with modern tips, to prepare a healthy platter packed with delicious flavours that is simple to execute from home.
