The Reuben on rye sandwich is a 20th century American deli classic. Composed of pastrami, Swiss cheese, sauerkraut, and Russian dressing grilled between slices of rye bread, the Rueben remains a popular comfort food meal today. This master class focuses on the theory and process behind creating tender and flavourful corned beef pastrami, the science behind making a good sourdough starter and how to keep it alive, and how to use fermentation to create your own from-scratch sauerkraut. After the theory is complete, create your own Reuben sandwich and sides to enjoy at the end of class with a glass of beer.
