Joseph Hoare Gastronomic Writer In Residence 2022
Stratford Chefs School is thrilled to welcome Andrew Coppolino as this year’s Joseph Hoare Gastronomic Writer In Residence(JHGWIR). Currently food columnist with CBC Radio Kitchener-Waterloo, Coppolino is a former writing and communications instructor at the School and brings a wealth of knowledge, experience and culinary passion to share with students during this upcoming school year.
“I have long admired the important work done by the Stratford Chefs School and the passion and commitment to the industry that their students exhibit,” said Coppolino. “I look forward to working with them and sharing the diverse food narratives and histories during my tenure as Writer In Residence. I’m looking forward to learning from them too.”
With a career spanning nearly two decades, Coppolino is a self-described “local food and restaurant ambassador” dedicated to promoting culinary businesses and advocating for chefs and restaurants.
His work in food writing began after a two-year stint as an apprentice cook at Peter Martin’s 20 King Restaurant in Kitchener, Ontario. “The work was hard and the hours long, but it taught me a lot about the industry and my passion for it – though, I must admit, it also prompted me to pursue a career on the other side of the kitchen pass! If you can’t stand the heat, get out of the kitchen,” Coppolino said.
Food columnist for Metroland Media Group and Waterloo Region Tourism, Coppolino is former restaurant reviewer for the Waterloo Region Record and author of Farm To Table: Celebrating Stratford Chefs School Alumni, Recipes and Perth County Producers (Swan Parade Press) and co-author of Cooking with Shakespeare (Greenwood Press). He is currently writing a memoir.
Coppolino joins a respected list of Joseph Hoare Gastronomic Writers In Residence including Jane Sigal, James Chatto, Ian Brown, Corby Kummer, New York chef and author Gabrielle Hamilton and Bob Blumer. As the JHGWIR, Coppolino will share his optimistic vision for a strong food landscape that requires skilled and creative chefs and restaurants serving knowledgeable consumers who appreciate the complex art, craft and science of one of Canada’s most important sectors, the food and hospitality industry.

Attention Foodies! Our Open Kitchen cooking class program, led by Chef Instructor Eli Silverthorne, is running through September, and has something for everyone!
‘Get Cooking!’ classes are intensive workshops focused on themed recipes, such as our classes on Vegetarian cooking, and a variety of International cuisines like Spain, Greece, China, India, Israel, and others.
‘How Do I Use That?’ classes are informative workshops that demonstrate new-to-you kitchen tools or gadgets such as Knife Sharpening, Immersion Circulators for sous vide, and Smokers.
‘Trade Secrets’ focuses on exploring a cooking technique, dish or product, such as quick meals, the ultimate burger, fast fermented breads, pasta-making, and more.
