Black Bean BBQ Sauce

Sean Collins (SCS Class of 2008)

 

INGREDIENTS:

1 T vegetable oil

1 large onion, minced

1 thumb ginger, minced

4 cloves garlic, minced

1/2 cup fermented black beans

1 Litre chicken stock

1/4 cup molasses

1 cup brown sugar

1/4 cup rice vinegar

 

INSTRUCTIONS:

1. Sweat onion, ginger and garlic in vegetable oil over medium low heat until soft, about 5 minutes.

2. Add black beans and cook briefly.

3. Add stock, sugar, molasses and vinegar.

4. Simmer 20-30 min until slightly reduced.

5. Let cool to room temperature.

6. Blend until smooth.
