Born and raised in Thunder Bay, Ian’s culinary adventures began more than 20 years ago while working his way through university. Having worked in many aspects of the restaurant business, Ian felt it was time to hone his skills and enrolled in the Stratford Chefs School in 1999. After completion of his studies he spent time in London, England, working in a Michelin-starred restaurant to gain more experience. Upon returning to Canada, Ian became the Chef of Pazzo Ristorante and Pizzeria, then joined the culinary team at Down the Street, worked as the Pastry Chef at Bijou Restaurant and currently holds that position at The Bruce. His work at the Stratford Chefs School has included purchasing, marking, assisting the Pastry Instructor, and teaching Practical Cookery, the Preparatory course and March Break Culinary Camp.
