Canadian Guest Chef

Dacha Markovic grew up in the Balkans in the early nineties. He knew from a young age that he was drawn to hospitality; influenced by helping his mother cook at home and also from his father’s time working in hotels and restaurants. He worked at the Hyatt in Belgrade, Serbia during his time at culinary school and came to Canada in his mid-twenties.

After running his first kitchen in London, Ontario, he set out to learn from the best, and so set sights on Langdon Hall and shortly thereafter Fogo Island Inn. He has also explored Canada, staging from coast to coast and also running the culinary program for a tree planting camp in northern BC; a role he values for its ‘extreme bush cooking’ lessons.

He is now the Executive Chef for Elora Mill Hotel and Spa, which is poised to be one of Ontario’s premier destination establishments. He met his wife Brie at Langdon, who working there as a Sommelier, and he is now in his most cherished role as father to a wonderful daughter.
