My name is Justin Dafoe. After years of cooking different cuisines, styles, and under some great, talented chefs, I have developed a love for fine dining, and techniques that showcase the greatness of the ingredients themselves. My style is pulled from many backgrounds of food, especially French and Asian methods. I have worked on both the east and west coast of Canada, and spent time in San Francisco, at Coi, under Chef Daniel Patterson. Another great influence has been my time spent at The Bruce Hotel, here in Stratford.
I am currently working in London, Ontario, at Abruzzi. We are in the process of opening a sister restaurant in the city later in 2018.
