Preparing a written menu package will provide the Student Chef with the opportunity to critically analyze the menu. This exercise requires students to examine the style of cuisine, gastronomical and nutritional approaches, food styling, and design features of the menu and the cuisine it represents, as well as the menu’s marketability in today’s restaurants.
