Chef Miles Pundsack-Poe Returns to Ontario Roots

We last caught up with Chef Miles Pundsack-Poe (Alumni, Class of 2009) in February, when he returned to the School, his alma mater, as a Canadian Guest Chef to work with our Level Two Cook Apprentices. Under his leadership, they created and served an exceptional multi-course dinner menu for the public.

Foxy’s Bar * Restaurant * Bodega

Chef Pundsack-Poe, most recently Executive Chef of Restaurant Dorsia in Montreal, has returned to his Ontario roots to lead the new Foxy's Bar * Restaurant * Bodega in Elora! The Spanish-inspired, late-night-leaning tapas room is nestled in one of Elora’s most beautiful heritage buildings, the Ayrshire Hotel, an iconic flatiron building in the core of the village, and expected to open August 1.

From the World to Elora

Raised just minutes from Elora, Pundsack-Poe trained at Stratford Chefs School before building a career that stretches far beyond small-town Ontario: Langdon Hall and Eigensinn Farm early on, then kitchens across Spain, Napa Valley, Montreal, and Shenzhen, China. His CV includes time at Michelin-acclaimed kitchens such as The Restaurant at Meadowood in California, and stints in Spain’s celebrated culinary scene, including Etxebarri and Echaurren, as well as leadership roles in Asia’s 50 Best–ranked restaurants.

After spending so much of my career abroad, it felt like the right time to come home,” he says. “The Foxy's menu is really a hybrid celebration of my love for where I’m from in Canada, right here minutes from Foxy’s, and my truly life-changingly amazing time learning and cooking in Spain.”
