Summer Diploma Program | Curriculum

The Summer Diploma Program offers the same 16 week curriculum as Level 1 (the first half of our 32-week Professional Diploma program), delivered on a modified Summer schedule, Monday through Friday.

The program begins by teaching the basic skills and techniques from both French and Italian classic culinary traditions and evolves into contemporary, cutting edge and International technique and skill set training.

Hands-on cooking classes run five days a week and are complemented by theoretical course components for a complete culinary curriculum. Four savoury-focused and one pastry-focused practical classes are taught each week.

The theory curriculum focuses on expanding student knowledge in subjects related to the culinary and hospitality fields including: service, sanitation, communication, writing, food costing, food history, nutrition, gastronomy, wine and kitchen management.
