Chef Eli’s Kitchen Tips: Ricotta

Not many ingredients work as well in both sweet and savoury dishes as ricotta. You can use it to make fluffy pancakes, bake a cheesecake, dollop it on pizza, use it as a base in a savoury tart, add some to pasta sauce, fold it into hummus, swap it for your morning yogurt, or even try churning some gelato!
