If you ask Ruth Klahsen, owner and lead cheesemaker at Monforte Dairy, how she got into making cheese, she’ll tell you, in that self-deprecating way she has: “I’m just an old broad who had a mid-life crisis!”

The real story is that Ruth is living proof of how an individual can have a transformative effect on local food systems. A graduate of the inaugural class of ’83 at Stratford Chefs School and a professional chef for 25 years, she embarked on an adventure that would see her become one of Canada’s most celebrated cheese makers.

They encouraged my culinary exploration, which continued into my adult life when I became a flight attendant and was given the opportunity to travel and eat all over the world. Since graduating, I have been a teacher in a Montessori school, helping kids in grades 7-9 find their culinary voice, as well as running my own catering company…

I was born and raised in Amherstburg, Ontario, to a family of Italian immigrants. Food was, and is, everything to us. I have always loved cooking, baking, and experimenting in my own kitchen so it felt natural to turn to cooking after university and a small stint in publishing…
